May I have your attention please: The sun is out! I repeat: The sun is out!
Which means it is about high time to spend your days out on the balcony. Ideally with a cooling beverage, or as I would prefer, a slice of cake with a scoop of ice cream slowly melting away, oozing over the edges of perfectly baked, crispy golden batter, dripping onto your favorite skirt… YUM!
Now I know this isn’t always an option. Mainly because there is only so many times you can wash your favorite skirt. But also because cake isn’t something you just happen to have in your pantry at all times. And here I go, making you drool – shame!
But imagine a world in which this were an actual, viable option.
Imagine a pantry brimming full with moist, yet crumbly cake sending sweet fragrances up your nose with every swing of the pantry door.
Imagine sweet desserts at your disposal in the blink of an eye, just a twist of a jar away. Luckily, this could be a reality!
And I have the cure to your sweet cravings: Cake in a jar!
You’ve seen me do this before with my almond-Baileys cakes and my lemon-yoghurt cakes in a jar and yes, I am still a fan.
These cakes here are stracciatella-flavored. Stracciatella is one of the most well-known gelato flavors in Italy, also very popular in Germany, and a fantastic mixture of vanilla and shavings of chocolate.
The perfect combo!
Cakes in a jar enable you to store your cakes for up to a year. But because they are also baked inside the jars, they never really lose their moisture and remain soft and gooey all throughout!
Now don’t let the photographs fool you. I made these cakes quite a few years ago, it’s true, but only just stumbled across the images. I am happy to say that they were a big hit and no longer exist (always a good sign!). But I thought I’d share the recipe with you anyhow!
The clever packaging also makes it easy to take the little treats to picnics or send them on a journey to a dear friend in need of some delicious cheering up.
If you ever happen to forget a birthday here or there, or need a last-minute-invite gift: Do not fret! Just grap a jar, add a little candle and a ribbon, and off to the festivities you go!
HERE’S WHAT YOU’LL NEED:
- 6 jars (290ml, sterilized)
- 130g sugar
- 130g butter
- 1 T vanilla sugar
- 3 eggs
- 200g flour
- 1 T baking powder
- 50ml sunflower oil
- 50g curd (20% fat)
- 100g chocolate shavings
Preheat the oven to 170°C and prepare your jars.
In a large mixing bowl, cream together the butter, sugar and vanilla sugar until pale and soft. Add the eggs one by one, beat well until fully incorporated.
In a separate bowl, combine the flour with the baking powder, then add the flour mixture to the sugar mixture. For best results, use a sieve. Add the curd and sunflower oil, mix until smooth. Carefully fold in the chocolate shavings.
Evenly divide the batter between the prepared jars and bake for 35 minutes or until a toothpick inserted comes out clean.
Once done, remove the jars from the oven and immediately seal with the lids. Be careful, as the jars will be very hot.
Let cool and enjoy when needed!
